Founded in 2006, Aviation gin takes its name from the Aviation cocktail, which was created in the 1900s. The gin takes a Dutch style rye spirit base combined with with juniper, lavender, anise, sarsaparilla, orange peel and cardamom, and the botanicals are steeped in grain spirit for 48 hours before they are redistilled.

Aviation Gin is a completely unique and distinguished gin from Portland, Oregon. Based on a ‘Botanical Democracy’ Aviation Gin has a balance of flavors rather than being dictated by juniper.
A blend of juniper, cardamom, lavender, Indian sarsaparilla, coriander, anise seed and dried sweet orange peel is macerated and distilled in a grain neutral spirit.
A fantastic base for cocktails and in particular the Aviation cocktail after which the brand is named; Aviation Gin, lemon juice, Maraschino liqueur and Violette liqueur.
For a more traditional G&T style serve, mix with Elderflower Tonic and garnish with pink grapefruit.
