They’re also a good source of both magnesium and potassium (clams and oysters provide similar benefits). Since scallops are extremely perishable, they are usually shelled, washed and frozen as soon as they are caught. To defrost frozen scallops, place them in milk (or water) that has been boiled and removed from the heat. Alternatively, they can be placed in the refrigerator to defrost.
